Curried Parsnip and Fava Bean Soup

This is the first in an occasional series of recipes using Hodmedod’s dried peas and beans….

It feels like Winter has really begun, so it’s a perfect time to start cooking warming soups. This recipe is really easy, costs pennies to make and is extremely tasty. I’ve been making it for years but recently tweaked the ingredients to use 100g of split dried fava beans rather than potato as I think this boosts both the nutritional value of the soup, and the taste.
