Pea and Spinach Soup

This started life as a National Trust recipe for a seasonal soup of minted peas and lettuce. I’ve always used frozen rather than the fresh peas specified but, in the midst of January, I didn’t have any lettuce. I also didn’t have any potatoes which the original recipes uses to thicken the soup. However, I did have some Hodmedod’s Whole Dried Kabuki Peas which I had previously cooked and frozen. In the twinkling of a hedgehog’s eye, I had rustled up this soup using the ingredients I had to hand. The soup was an amazing shade of green which cheered me up on a cold, grey day, cost pennies and was extremely tasty. Healthy and low in calories – my first veggie recipe for a 5:2 diet?
